Hi hi hi!
My sister wanted me to start a series called: “What’s In Janellie’s Belly?” and the premise is that I share either what I’m cooking/baking or do a What I Ate Wednesday. I used to do these types a post a while ago, but things just started to get a tad bit chaotic and it became difficult to keep up with it. Hopefully that isn’t the case for this go-around.
When I do a What I Ate Wednesday, I will be “recording” what I ate on Tuesday just so I can actually have it uploaded on Wednesday. When I do a cooking/baking recipe post, then there’s a chance that it will just be posted whenever it gets posted. I didn’t know how time consuming it can be when it comes to writing recipe posts because not only do I have to include pictures, but I also have to make sure the instructions are clear enough so that if someone attempts to do the recipe it comes out the same way.
Anyhow, let’s get into the actual What I Ate Wednesday!
BREAKFAST:
So I did a horrible job recording my breakfast this morning, but I did record the aftermath. For breakfast I had vienna sausage with rice (leftovers from Monday) and a cup of coffee with vanilla creamer. Some people don’t like vienna sausage, but I grew up with them and it makes such an easy breakfast or any meal (as long as it comes with rice).
LUNCH:
I was feeling the afternoon drag – so I had to get Starbucks and I didn’t have anything to bring for lunch from home, so I ended up picking up Starbucks’ seasonal turkey & stuffing sandwich (yummy)! Before lunch, around 11:30, I end up getting pretty hungry because I didn’t really eat much for dinner the night before, but I forgot to take a picture of my snack. For my snack I had 2 chocolate covered biscuit cookies.
DINNER:
For dinner I actually ended up making a co-workers recipe for taco salad. The picture doesn’t look too appetizing, but trust me it is delicious and easy to make! I know it’s gross to some people, but I actually like when my salad gets a soggy and really drenched with dressing, so I made a huge batch of this so I can eat it 24/7! Like I said it’s a super easy recipe all you need is taco filling (ground meat of your choice cooked with taco seasoning), package of chopped salad mix, thousand island salad dressing, tomatoes, avocados, regular onion or green onion, cheese, red beans, and really any other vegetables you want to incorporate, and you use tortilla chips as the croutons. This recipe is so simple, but you can swap out ingredients to create a healthier version of it.
SNACK/DESSERT:
After dinner, I had a homemade sugar cookie decorated with a simple glaze (powdered sugar, vanilla extract, and milk). In my food diary, I usually classify any afternoon coffees as a snack, so from Starbucks I got my favorite seasonal drink (besides my beloved PSL) chestnut praline latte.
