[Lifestyle] Keto Diet – Journey Begins – January 1, 2018

Hi hi hi!

I had eluded to this change in my lifestyle a little and like always I wanted to document this whole journey. My boyfriend had originally told me about the diet, but I was too stubborn to really listen to him because I thought I already knew about it ( I was wrong). I talked to our friend who is currently on the diet and really grilled him about it and I was pretty convinced that I wanted to start the diet. 

When I got home that night, I read more articles about the diet and the whole idea behind it and the reasoning of the diet made complete sense to me. Today was the first day that I actually prepped  most of my meals as well as really try to eat keto friendly. I wasn’t able to exercise like I had wanted to, but I know that my diet will be the key to success. If I don’t eat will, it won’t matter how well I do when it comes to working out, if I don’t follow the diet, it won’t matter.

Meal Planning:img_6319.jpgThis is the first time that I really planned out any of my meals, but again, this is another key for me. When I have a plan I’ll be less tempted to deviate from it when it comes to grocery shopping or even creating any meals. The picture above is my meal plan for this first week. Am not sure if you can see it, but I have left a couple of spots open so that I don’t really sacrifice my social life. On the weekends, I spend a lot of time with my boyfriend and my family and sometimes it involves eating out. I won’t completely sacrifice going out just because I’m on a diet. This diet is extremely flexible so I don’t have to completely sacrifice spending time with them.

Meal Prepping:

Today I meal prepped quite a few things, but before I get into that, I wanted to share something that I made a few days ago. It’s called Cloud Bread. It’s a great alternative to actual bread because it gives the texture of bread, but it’s awesome for a keto diet because the main ingredient is eggs! If you are interested in the recipe, click here! It’s a pain to create any type of sandwich because it’s too thin, but it’s great to create an open-face sandwich and I’ve even used it to create a “pizza.”

Alright, now to show what I actually prepped. The first thing I did was roast carrots and cauliflower. I love roasted img_6332.jpgveggies, but on this diet, you really have to be on the lookout for hidden natural sugars. So I have to watch how much of the carrots that I eat. I also made pan-seared brussel sprouts that I could mix in if I wanted to add some bulk. In regards to the brussel sprouts I purchased a bag of frozen brussel sprouts thawed them, cut them in half, and pan-seared it for a bit till it got a nice caramel color on it.

While those were roasting in the oven, I boiled some eggs so I can bring them to work as a snack during the mid-morning. I am also planning on bringing some apples (about half an apple) and strawberries. I will need to be careful in regards to fruits because they have a lot of natural sugar and the whole point of the keto diet is to have your body burn the fat that it’s stored for energy instead of burning the sugar that you put in. img_6333.jpg

I didn’t want to cook my dinner for tomorrow today because I don’t have enough space in my refrigerator, but I wanted to be ahead. Tomorrow I am planning to make a chicken pesto casserole and I hate dealing with raw chicken because it’s messy and takes up so much time. So to make it easier, I cut and divided the chicken into labeled Zipbloc bags. I also prepped the sauce that will be used which is 1 1/2 C heavy whipping cream and 3 oz. of pesto. The rest of the elements are things that I can do last minute. IMG_6331.jpg

The last thing I prepped was strawberries. I don’t usually prep my berries like this, but the container was taking up way too much space in my refrigerator, so I just cleaned and quartered them and put it in an air-tight container. IMG_6336.jpg

Breakfast:

For breakfast this morning, I had one cloud bread, left over eggs (about 1 egg) cooked with tomatoes and garlic, some cheese and 5 Little Sizzlers. To me, it doesn’t sound like a whole lot of food, but I found myself getting extremely full and it kept me full for about 4 hours. Usually I have 3 Little Sizzlers and rice and when I’m done eating that I don’t really feel full, so it was surprising to me to feel full off of the open-face breakfast sandwich.

Lunch:

I wasn’t too hungry, but my stomach started to growl, so I at some of the roasted veggies and strawberries with a chocolate dip.

Dinner:

I went over to my boyfriend’s house for dinner and there was prime rib, grilled shrimp, au gratin potatoes, green bean casserole and dinner roles. I ended up filling up on mainly the prime rib and shrimp and had about 3 tablespoons of the green bean casserole and au gratin potatoes.

Dessert:

To top it all off, I had about 1/4 C of quartered strawberries with whip cream.

I have to say, I’m not extremely hungry and I’m not craving anything. I actually feel really good and I’m excited to see what I feel like tomorrow during work. Hopefully I will remember to take pictures of the things that I’m eating so that you guys have a better idea of what the food looks like.
