[Lifestyle] Keto Diet – January 2, 2017

Hi hi hi!

Today is the second day of my keto diet and I am feeling great! I thought that I would be feeling sluggish and bloated because I have been eating a lot of high sodium items. Let’s jump into today’s meals!


For breakfast I kept it pretty simple. Eggs with sauteed tomatoes, half an avocado and 3 Little Sizzlers. If you watched my vlog you’ll know that I tend to cook more eggs than I can eat, so I always have some left over eggs if I’m still hungry.

Mid-Morning Snacks:

I usually get hungry around 10:30-11:00AM, mainly because I eat breakfast around 6:30AM. So for my snacks today, I brought one small Fuji apple (quartered), 1 string cheese, and 1 hard-boiled egg.  I ended up eating the string cheese and half of my apple around 11:45AM.


So I forgot to take a picture of my lunch, but I brought 3 Little Sizzlers, eggs with sauteed tomatoes, cloud bread, and avocado mixed with some lime juice, salt & pepper. I only ended up eating about ¾ of my cloud bread, 1 ⅔ of my Little Sizzlers and about half of the eggs. To be honest, my stress level was extremely high and usually when I’m stressed out I lose my appetite.

I ate lunch around 1:45PM, but I was starving. I really wanted to have my lunch earlier, but I couldn’t since our Admin was on her lunch break and I don’t like to eat when I’m covering the phones. Whenever I eat lunch, I tend to always eat at my desk and do work in between bites. I found myself getting fuller faster, but it could just be that I was distracted so it allowed the food to really settle in my stomach faster.

In terms of my energy level, I hit a wall around 2:30PM, but I wasn’t like I need to fall asleep tired. It was more of, “I’m tired of sitting down and staring at a screen” tired. I’m thinking about hitting the gym for a little cardio when I get home, but that’s my thought right now. I don’t know if I would have the actual energy to go to the gym after today is done.

Late-Afternoon Snack:

It never fails, but on the drive home I am always hungry. So I ate the remaining half of my apple and I was satisfied for the remaining drive.


I didn’t make it to my nearby gym – it’s literally like 20 steps away, but I ended up cooking at home and I just worked out in my spare room. It wasn’t anything intense, but it was enough to get my muscles burning.


I am so proud of my dinner! Doesn’t it just look amazing?! The crazy thing is that this whole pan is supposed to be 4 servings! If you’re interested in the recipe, just click here. It’s extremely easy and this is definitely a recipe that I’ll be keeping around for a very long time. The carb lover in me wanted to plate this on top of some pasta (which would be delicious), but I was good and decided to put it on top of some roasted veggies. I would also put it on top of spaghetti squash (yum)! It’s such a versatile recipe, it is simply a must try.


To end the night, I made myself a 10 oz. cup of decaf coffee with some creamer that I frothed.

First full day of keto is done! I have to say that I did pretty well and I’m feeling great so far. I’m excited to get my ketone drink in the mail and give that a try, but I have no clue when that will be coming.
