Hi hi hi!
I was hoping that this particular recipe would be one that was decadent and delicious, but to be honest, when I was preparing it, I was exhausted. I had just gotten home from a long day at work, I had been up since 3 in the morning, and I also went to the gym. So this is my lazy chicken parm. Easy to throw together and absolutely delicious. Seriously, you can’t mess this up.
The original idea for this particular recipe was me simply wanting a pasta dish without it being heavily focused on the pasta – like having spaghetti, alfredo, etc. Chicken Parmesan is one of my favorites and I figured by using that as the main focus of the recipe and treating the pasta as more of a side dish, I wouldn’t have to be extremely concerned regarding the macros.
I used boneless skinless chicken thighs mainly because it has so much flavor. I cut it into bite-size pieces and tossed it in my crockpot/instantpot to brown. While that was browning I peeled a bagillion cloves of garlic (okay it was like 6 small cloves, but still, it was a lot) and let that cook together.
In the meantime, I popped some cauliflower in the microwave to defrost/steam. Once the chicken was ready, I scooped it out (along with extra sauce) and placed it on top of the cauliflower and topped it with a bunch of cheese because I love cheese and cheese is life. Voila! Such a simple and easy dish.
