It’s been a hot minute since I shared any ‘In The Kitchen’ posts, and I thought this would be a great one to share! I stumbled upon a pin on Pinterest with the title: 55+ Easy Keto Recipes and I decided to check it out. I’ll leave the actual link to the recipe here. I really wanted to get back to meal planning, for the past few months I had fallen off the wagon in regards to it and I noticed that my fridge and freezer have been packed with so much… crap. I have stuff in there that has either gone bad or is definitely not on the keto diet. This was my attempt at bringing some kind of order to everything.
The recipe is extremely easy and I have to admit that I was a little intimidated at first because it called for fresh herbs, but it was actually a pretty easy recipe. I did have to tweak a few things here and there because I ended up having more chicken than the recipe called for and I couldn’t find raw riced cauliflower, nor do I have a food processor to make my own.
This was a great recipe, especially the riced cauliflower! It was delicious and the parmesan added a slight creaminess to the overall flavor that really boosted it. It was my boyfriend’s favorite part of the meal – he can be very selective when it comes to the side dish. I noticed that in the recipe, it didn’t really call for any salt, which is a huge mistake in my book, especially on the keto diet. Your body needs the salt in order to absorb water, plus this whole thing tasted extremely bland without it. Since I couldn’t find raw riced cauliflower, and I couldn’t make my own, I ended up using frozen riced cauliflower. I heated it up following the directions on the package and when I added it to the pan I omitted the chicken broth since it’s already cooked and I wasn’t sure if all the liquid would evaporate. I ended up using about 1 ½ packages of the frozen riced cauliflower and it was more than enough for four servings.
The chicken on the other hand, I could have done without. The recipe said to marinade it for 10-15 minutes, but I think if you could do it for a few hours it would be better. You may also want to consider adding in a touch more Italian seasoning. When I tasted the chicken on its own it was very bland and didn’t absorb much of the marinade flavor. The only saving grace to it was that when I added salt to it, it gave it some life.
I had a lot of leftover chicken, and about 1 ½ cups of the cooked cauliflower. I wasn’t interested in the chicken at all, so I shredded it and added mayo to the whole thing, yes, including the cauliflower, and made myself some chicken salad. It made a filling, but delicious lunch the next day!
